Toby’S American Style Pancakes

…with Maple Syrup and crispy bacon. He thinks adding a few blueberries on the side make this a healthy dish! LOL 2 eggs (hurrah if you have chickens!) 100g self raising flour generous pinch of salt 150ml milk (goat or soya milk will work fine) Sunflower oil for the pan. Streaky bacon 2 rashers per person (or 4 if you are Toby!) 2 tablespoons Maple syrup per person to serve (or as much as will fit on the plate before it overflows if you are Toby!) Greek Yoghurt, blueberries, or anything else you fancy to serve. If you are just using fruit, a sprinkle of icing sugar and a tiny sprig of mint makes it look pretty, and not much more fattening! Method First, go for a 1km swim, go out for a 5km run, or cycle 10km. Ideally, if you have time, do a short triathlon, then you will be ready for the calorie onslaught that this treat delivers!

Sieve the flour and add the salt sugar into a bowl. Separate the eggs, pop the yolks into the dry ingredients, along with the milk, and mix this lot into a paste – put the whites into a different bowl. Whisk the egg white until they are fluffy, but not stiff.Fold the egg whites into the paste, and be a gentle as you can – the idea is to keep as much air in the mixture so that when you cook the pancakes they fluff up a bit, and are light in texture. To cook, wipe a piece of kitchen paper dipped in oil around your pan, not too hot, and pour blobs of batter to your preferred size into the pan. If I am doing this for lots of people, I do big ones and cut them into quarters. that way, everyone is eating at the same time. Warm plates are a good idea, then pile the pancakes up, topping with your choice of extras. They go well with fresh juice and a cup of coffee or tea at breakfast time
