One duck for 4 people, so for 16 people, you will need 4 whole ducks! cooking time about 50 minutes roasting, preparation time about 10 minutes for chopping onions and cucumber 200 C

duck (as if it wasn’t obvious!) 1 for every 4 people plumb sauce (for 4, you need about a mug-full) thin wheat pancakes ( about 4 per person) ( I buy these in, saves a lot of mess!) spring onions sliced lengthways – about 4 per person cucumber sliced into sticks – about a 7cm section per person
Method This dish is so simple, and yet it is considered a real treat by my lot. Very little effort needed, and portion size is entirely flexible. Pop the duck in a really hot oven 200C or 18oC for a fan oven, check it neat the end of the cooking time, and if you think it needs a boost, ratchet the temperature up a bit for 10 minutes. When it comes out , use two forks to shred the meat and serve it on a hot plate with some small tongs or chopsticks for people to help themselves. Mostly, the carcass is picked clean, and I get rid of it in the green cone (1) not in landfill! Whilst the roasting is underway, slice the onions and cucumber, about 4 spring onions and a 7 cm section of cucumber per person is about right. If you don’t finish them all, they are ready for the next salad, so there is no waste. The pancakes take no time at all in the microwave.
