Coconut Biccys

Ingredients 2 oz Desicated cocnut 2 oz Light brown sugar 1 tsp Flour The white of one egg 3 Drops of vanilla essence (Optional – cherry / raisins) Oven 190°C – 200ºC 10 – 15 mins (depends on how big your biscuits are) Method Whisk the egg until stiff. Mix desicated coconut; light sugar egg and vanilla essence. Shape into biscuit shapes. Put on Greaseproof paper (or tray with butter) Cook until lightly golden brown.

Intro Soft cheese- what does it mean to you? To some its a tasty sandwich filling whilst to others it’s a fun night in. Either way, Youre sure to enjoy this rum and raison cheesecake recipe which requires oodles of the stuff. What You Need 12 oz of Soft Cheese 8 inch non-stick tin (maybe a removable base) 1/4 pint of double cream 2 oz of soft brown sugar 4 oz of raisons 3 tablespoons of rum 1/4 teaspoon of vanilla essence 2 free range eggs 6oz of digestive biscuits and 4 oz butter

Ingredients 75g soft dark sugar 2 tbls, ground, not flaked 1/4 teaspoon ground cloves 1/4 teaspoon dry mustard 1 1/2 teaspoons ground allspice 3 teaspoons cornflour 1 small eating apple, peeled, cored and finely chopped Method Place ingredients in a saucepan add 220ml water bring to boil, stirring; simmer for 5mins or until tick

Ingredients 1 large pepper seeded and chopped finely 500g tomatoes, skinned and chopped 1 small onion 1 garlic clove 155ml dry white wine large rosemary spring 2 tbls sunflower oil salt and pepper Method Put the first 6 ingredients in a saucepan. Vanilla Fudge

Ingredients 1/2 pint fresh milk 8oz butter 2lb granulated sugar 2 tbs golden syrup 1 large tin nestle milk 1 tsn vanilla essence Method grease a tin 9×12. put butter and sugar into a saucepan over low heat until the sugar has dissolved. add the syrup and the nestle milk and bring slowly to the boil then simmer gently stirng continuously, for about 35 mins. after time is up place a teaspoon of the mix in a bowl of cool water and if it form a soft ball it is done.

Mayonnaise

Details Makes 155 ml (5 fl oz/²/3 cup Ingredients 1 egg yolk Pinch salt ½ teaspoon Dijon mustard 155 ml (5 fl oz/²/3 cup) olive oil 2 teaspoons wine vinegar or lemon juice Method Have all the ingredients at room temperature: this will help prevent curdling. Put egg yolk, salt and mustard into into a bowl. Stand bowl on a damp cloth to stop it sliding about. As mayonnaise thickens, add oil in a steady trickle.

Tira-Mi-Su

Ingredients 1/2 pints of milk 2 tubs/8oz creamcheese mascapone 2 egg yolks 2-4oz icing sugar-sifted coca to sprinkle strong coffee 2 packets of sponge fingers Method blend in 1-4 items, then dunk sponge fingers into coffee. put it on the plate your baking it in. base layer-cover with cream mix 2nd layer of soaked base then cover this in the cream mix. cover all with coca and will serve up to 8 people.

Ginger Bread Men

Details serves: 16 cooking time: 12-15 mins oven 190 C Ingredients 350g flour 1 tsnp bicarbonate of soda 2 tspns ground ginger 110g butter 175g soft brown sugar 1 egg 4 tbspn golden syrup decorations Method preheat oven to 19 C grease a few baking trays sift the flour, bicarbonate of soda and ginger into a mixing bowl. then rub in butter until it looks like breadcrumbs stir in the sugar, then the egg and the golden syrup knead dough to about 10mm thick cut out shapes and put them on the baking sheet.

Banana Cake

Details serves: 12 cooking time: 1 hour oven 175 C Ingredients 310g flour 15g baking soda pinch salt 115g unsalted butter 200g white sugar 110g light brown sugar 2 eggs 4 ripe bananas, mashed 150ml buttermilk 60g chopped walnuts Method preheat oven to 175 C grease and flour 2 eight inch round pans. in a small bowl whisk together flour, baking soda and the salt and set it aside in a large bowl cream butter, white and brown sugar until light and fluffy.

Details serves: 4 cooking time: 30 mins oven 175 C Ingredients 310g Plain Flour 15g Baking Powder 1g Salt 115g Margarine 200g Castor Sugar 110g Brown Sugar 2 Eggs 4 Bananas 160ml Milk 1 tsp Sugar 60g Walnuts Method Probably just smunch it all together in a bowl, slop it into a tin and then cook.
