Chocolate Log (Fatless Sponge) But Lots Of Cream

Christmas 2020 Make a Christmas Log – with only the ingredients found in the fridge and store cupboard two days before Christmas. Someone bought double cream and mascarpone cheese, and the use-by dates were all coming up soon. This is the story of how everyone at home grew to love wood! Oven temp at 200C cook the sponge for 8 or 10 minutes. no longer!Sponge4 eggs100g caster sugar65g self raising flour40g cocoa powderFilling300ml double or whipping cream‘Bark’ icing250g (a tubs worth) mascarpone cheese250g about the same quantity of dark chocolate, melted in a big bowlicing sugar for dredging etc For the sponge: 4 eggs (no worries, the chickens are still laying) ; 100g caster sugar – Combine and whisk until the mixture is almost white, about 7 minutes on full whisk-power.

Sausage Cassoulet With Red Wine

Wonderful mid-week winter supper – do it with Baked potatoes, or crusty bread. And be sure to check the wine… Ingredients (for about 6 people) pack of 8/10 good quality sausages. Olive oil – to cook 2 or 3 Onions, chopped into 1 cm bits. 2-3 cloves of garlic crushed Chickpeas (I use a tin) Tin of tomatoes Tomato puree Red wine – about a glassful, but since you will have a bottle open whilst you cook, you may pretend that you have used more than this.

Ice-Hockey Puck Brownies

Hockey Puck Brownies – the perfect snack to support my colleague Josh Abbott playing number 18 for the Guildford Phoenix. Go Josh! Puck dimensions: 25mm x76mm diameter, 70g. Hockey Puck with ‘ice’ I added suggested heckles for folk to shout… Give it some stick! What the Puck! Rah Rah Joshua! Two baking trays, slips of paper for the heckles, and clingfilm for transport, and napkins for serving. Office Cake for any occasion. It really should have been in the shape of a whale – it serves about 20! Made for Becks for her January birthday in the office. She was made in 1992, so she is 30 years younger than me! Tartiflette (Avoiding Cow’S Milk!)

The classic ski holiday tummy filler from the Savoy region of France is positively death to anyone with an allergy to cow’s milk or cheese, like my daughter. So, without loosing any of the dreamy-creamy delirious deliciousness, try this alternative recipe. It uses a cheese available at Waitrose called Petit Basque (fromage de brebis or ewe’s milk cheese with a similar soft quality to reblochon.) Serves 4 6-8 medium-sized potatoes, that have that waxy texture when cooked, like new potatoes.

Lemon Sorbet

A crisp refreshing sorbet does the job to clean the palate as part of a good meal, or can be served on a hot day to cool and refresh! Basically, it is just lemon juice, water and sugar, but there is more to it than that: there are three ways to make sorbet softer: add alcohol, add golden syrup, or add egg white, whisked into fluff towards the end of freezing.

Toby’S American Style Pancakes

…with Maple Syrup and crispy bacon. He thinks adding a few blueberries on the side make this a healthy dish! LOL 2 eggs (hurrah if you have chickens!) 100g self raising flour generous pinch of salt 150ml milk (goat or soya milk will work fine) Sunflower oil for the pan. Streaky bacon 2 rashers per person (or 4 if you are Toby!) 2 tablespoons Maple syrup per person to serve (or as much as will fit on the plate before it overflows if you are Toby!

Christmas Crispy Duck

Details One duck for 4 people, so for 16 people, you will need 4 whole ducks! cooking time about 50 minutes roasting, preparation time about 10 minutes for chopping onions and cucumber 200 C Ingredients duck (as if it wasn’t obvious!) 1 for every 4 people plumb sauce (for 4, you need about a mug-full) thin wheat pancakes ( about 4 per person) ( I buy these in, saves a lot of mess!
